Shrimp Summer Rolls

Remember  this post? and how difficult it was to make summer rolls with rice paper? Well, I decided to use two rice paper per summer roll and it was so much easier to make! Try it. 

 

Let's talk about birthday presents! I got a bike from Mitchell for my 27th birthday! wohoooo. My bike got stolen (bummer) when we moved to California. I still go on craigslist hoping that I will find it there. I was a bit upset because I thought I would use it more here and I was also upset because it reminded me of my trip to Sicily back in 2010. I cycled all throughout Eastern Sicily and that bike was the bike I used to train in NH. Anyway, I was thrilled that Mitchell got me a bike. I decided to talk about it on this post because it's  as purple as the vegetable below! It reminds me of it.

 

It is a Specialized Vita road bike. I road it today for about 7 miles and it was great.  I hope I get to use it more when we move to the city. 

 

Enough about me.... more about you. I hope your weekend is full of activities. It's been nice here so I hope you take advantage of the weather and get out there spend time with your family and friends and have some fun in the sun. Go to the beach, go for a run, bike, tan, make lemonade and sell it. I hope you do something you like doing this weekend. 

 

 

 

Servings: 10 rolls

Level: Difficult

 

20  Grennland Spring Roll Rice Wraps (Featured Products) 

10 piece green lettuce leaves

1/2 english cucumber cut into strips

2 carrots shredded

30 medium sized cooked shrimp

 

Directions:

1.  Place a wide, shallow bowl of warm water on your table. Lay a clean kitchen towel next to the bowl

2. Dip 1 rice paper for a few second until it softens. Lay it flat on the counter. Dip the second rice paper and place it on top of the first rice paper.

3. Using the towel, gently pat dry the rice paper. 

4. Center a lettuce leaf on top of the stacked rice papers. Top it with strip of cucumber, carrots and 3 cooked shrimp.  

5. Lift the bottom edge of the rice paper up and over the filling and then roll once to form a tight cylinder. Fold in the sides of the rice paper and continue to roll the paper and filling into a tight cylinder. 

6. Set aside, seam side down. Repeat with the remaining rice paper and filling ingredients to make 10 rolls.
