Sweet Kale Salad

We are not a big fan of kale. Kale itself is bitter and just doesn't taste good at all. Plus, it gets stuck on my teeth! agh not a big fan. BUT kale in a salad is awesome!!! Well, as long you mix it in with the proper ingredients.

 

 For this salad, the sweetness of the carrots and cranberries really makes this salad an awesome one. I also added pecans for some crunch.  For the dressing, you can choose anything you want but I suggest something lite and sweet. Lite honey mustard, lite creamy lemon poppy seed dressing are a couple of good choices. 

 

I had this salad after a long bike ride and a swim and it was just perfect. The only thing I didn't like about it is that it got stuck in my teeth. It wasn't very attractive. AT ALL.

 

Anyway, Penny and I are off for a run. I might bike today. I found a Jamba Juice about 4 miles out our trail so I will be cycling there and getting a refreshing drink. I will let you know what I got. I am also debating weather I should go swimming after the bike ride or not. Decisions, decisions... 

 

 

 Serves: 1-2

Level: Easy 

 

Ingredients: 

2 cups Kale

1 cup Red cabbage

1/2 cup sweet carrots

1 cup Radicchio

1/2 cup Cranberries

1/4 cup Sunflower kernels

1/4 cup Pecans 

Your favorite dressing: I used Lite Lemon Creamy Poppy Seed Dressing

 

Directions:

1. Combine everything in a bowl.

2. Serve with your favorite dressing on the side.
