Kale and Brussels Sprouts Chopped Salad
I've been obsessed with making Kale salads lately. Not only it's filled with vitamins and minerals but it taste delicious in a salad. Did you know a cup of kale salad only has 36 calories? Yes, that low and 5 grams of fiber? Kale is very good for our body so I find every way to make it taste good!
In this recipe, I added raw brussel sprouts. I didn't think it would taste good but it actually adds some crunch in the salad. I also like to add sweetness into my salads so I decided to add cranberries. You can also add any sweet dried fruit you like. Sweet dried mandarin is an option or dried pineapples.
I know I haven't been posting a lot and that is because of my job. It's been crazy busy but it's a good busy. I'm learning a lot and always on my toes. I'll keep you posted more next week!

Ingredients:
2 cups Kale
1 cup Sliced Brussel Sprouts
1 cup Radicchio
1/2 cup Gluten-Free croutons
1/2 cup Shaved Asiago Cheese
1/2 cup Cucumber
Meyer's Lemon Garlic Vinaigrette
Directions: Combine all the vegetables together. Serve with dressing on side.
