A way to make your kids eat VEGETABLES!

What's one way to make your kids eat vegetables? SPIRALIZED your vegetables! We all know that most kids don't like the look or taste of vegetables. When they see vegetables,  they just run away! Well, one way to get them to eat more vegetables is by trying to be creative. Spiralized them! Hide them sauces! and lastly make them look pretty!

 Mitchell and I tries to eat as much vegetables as we can so one night I made chicken parmesan but instead of using pasta, I used zucchini as my "pasta" Was I able to tell the difference? not really! It taste great and feels lighter on my stomach.  The zucchini even adds a bit of a crunch in every bite. After making this, I thought about how much I hated vegetables when I was younger. But if my mom made this Zucchini Pasta for me, I would totally eat it. 

 

TIPS: Try not to overcook the zucchini. You want a bit of a crunch when you bite into it. If you overcook it, it not only taste watery, it also doesn't look appetizing. 

TIPS: After you spiralized the zucchini, make sure you pat dry the zucchini really well. Why? zucchini has a lot of excess water when you cut into them. Your "pasta" will be too watery if you do not pat it dry. 

TIPS: Make sure you cook the zucchini in oil first then quickly add the sauce in the end. Also, don't drown it in sauce!!!!! And season, season, season with salt and pepper! 

 

TIPS: Sprinkling some parmesan cheese in the end will really complete the "pasta" taste and look we're going for. 

Servings:

Level: Easy

 

Ingredients:

2 large zucchinis, spiralized

salt and pepper to taste

1 tbs red pepper flakes

2 Tbs parmesan cheese 

1/4 cup marinara sauce 

olive oil 

  

Directions:

1. Pat dry the zucchini after spiralized

2. Heat olive oil in a pan

3.  Saute the zucchini for about 2 minutes. Season with salt, pepper and red pepper flakes

4. Mix in the marinara sauce

5. Take off the heat and sprinkle some parmesan cheese on top

 

 

 TIPS: When making the salad dressing, make sure you whisk all the ingredients. Don't use a fork or a spoon - or whatever you use. Use a whisk! since there's sugar in the dressing, you really want the sugar to be distributed evenly! 

 TIPS: When cutting an avocado, make sure that the avocado isn't overripe. You would rather it be more under than over. Why? because when you're trying to swirl the avocado like what I did above, you want the avocado to be hard enough to keep it shape. If it's overripe, it will be mushy, won't look appetizing and you will get it everywhere on your hands. 

My spiralizer isn't the most expensive one on the market. I use WonderEsque Spiralizer. I bought it on amazon for less than $30. Was it worth it? Yes! Is it the best spiralizer out there? No!  

 

Good:

It does its job  and honestly, I wouldn't spend anymore on a spiralizer. 

It is small enough to store it away. 

It really makes any dish looks more beautiful and just more exciting

I think any kid would eat any spiralized vegetable, simply because it looks pretty! and anything that is pretty is appetizing.  

Easy to clean - WonderEsque provides a small brush to clean the blades and it works! 

 

Bad:

It was a bit hard to spiralized potatoes. I really had to use all the hand muscle (I didn't know I have) to hold the potato or sweet potato still. 

The suction at the bottom (to hold the spiralizer in place) doesn't really work.

Ingredients

2 carrots, spiralized 

2 cucumber, spiralized

3 Tbs silver almonds

1Tbs sesame seeds

half avocado, sliced 

 

Directions: 

1. Place the spiralized vegetables nicely on a salad bowl. 

2. Slice half of an avocado, very thinly. Spready it in the middle of the salad

3. Sprinkle some sesame seed and silver almonds. 

 

Rice Vinegar Salad Dressing: 

Ingredients:

1/4 cup vinegar

1/2 cup sugar

1 tablespoon oil

2 teaspoon fish sauce 

 

Directions: 

1. Whisk all the ingredients together. Pour over the salad.
