Baked Salmon with Capers and Tomatoes
Who loves salmon??? I do! I love it baked, pan fried, even in sushi. It's delicious and so good for you. Salmon is an excellent source of vitamin B12, vitamin D and selenium. It is a good source of niacin, Omega 3 fatty acids, vitamin B6 and phosphorus. It's filled with a lot of protein.
Make sure you wash the capers! If you don't it will be very salty and unappetizing. YUCK!
Also, I use multi colored grape tomatoes for a reason. I used it for color (how amazing are those colors??) and the flavor. I like how the grape tomatoes adds sweetness to the dish.
When seasoning the salmon, don't over season it. The capers itself will add saltiness to the salmon.
When you wrap the salmon in foil, make sure you seal every side!
Also you only see one foil in the picture above (that's because I'm only showing you one salmon). When you make my recipe, put each salmon to two separate foils.

2 salmon fillets
4 cups multi colored grape tomatoes, cut in halves.
2 tablespoons capers, rinsed.
4 Tbs olive oil
4 garlic cloves
4 tablespoon lemon juice
zest of 1 lemon
salt and pepper to taste
1. Preheat oven to 400F.
2. In a medium size bowl, combine grape tomatoes, capers, olive oil, garlic, lemon juice, and lemon zest, Mix everything together.
3. Season each salmon with salt and pepper. Put the each salmon in two separate aluminum foil. Pour half of the tomato mixture into one salmon and the rest to the other. Wrap and seal the salmon in the foil. Make sure to fold the sides also.
4. Bake for 20- 25 Minutes.
