4 (6 ounces) fresh raspberries
1/4 cup white sugar
3 tablespoon lemon juice
1 tablespoon water
1.Combine raspberries, sugar, water, and lemon juice in a saucepan over medium heat; cook and stir until raspberries break down, sugar dissolves, and sauce is heated through. (this is when you adjust the thickness of the sauce. If you want it to be more watery add another 1 Tbs of water in addition to the required ingredients above. If you want a thicker sauce , to put on top of ice cream for example, do not add the tablespoon that is required above).
2. Remove from heat and press sauce through a fine-mesh strainer to remove seeds.
3. Cool to room temperature, cover the bowl with plastic wrap, and refrigerate until chilled, at least 45 minutes.
